Guar gum is a precious cooking help:
Cold - instantly thickens a fruit shake, vegetable broth, a too liquid soup, a vegetable pâté... only add 2% guar gum to the preparation.
Hot - mix with the gluten-free flour, it will bring lightness and softness to all your pastry and bakery preparations. The use of 2% guar gum is enough. 1g corresponds to 1 teaspoon.

Flour extracted from a legume (Cyamopsi tetragonolobus).
Advice for use: for a gluten-free bread just add 10g of guar gum to 500g of flour (which is 2% of total flour), befor adding warm water and starter. Then proceed as for a normal bread recipe without gluten.
